It's the first one. Pedants is plural, so the apostrophe goes after the s showing possession of the corner. If it was Pedant's Corner I would think the phrase would need a definite or indefinite article ('The' or 'A') in front of it to indicate it was singular. The third could only be correct if someone was called Pedants and it was their corner, in which case it would be Pedants's Corner.

BTW I do get the joke. I'm just being pedantic!
